White Chocolate Strawberry Oatmeal Bars

Having ideas on what to make next is not really my problem.  My problem is my brain is overwhelmed by the sheer variety of recipes that could be made, and all the incredible ideas I see all around me.  It overwhelms me to the point of just being unable to motivate myself to pick anything at all.  Also, I am trying to watch what I eat (not just as I put it in my mouth), so I don’t want to make wonderful things that are calorie bombs that I wont be able to enjoy.  Thanks to my helpful blogger friends, a recipe for jam and oatmeal bars was the overwhelming vote for the next recipe.  I am thrilled to say, that here I have a heavenly recipe for White Chocolate Strawberry Oatmeal Bars.  They are chewy, sweet, hearty, and the lemon peel gives them that little something extra that they would be missing otherwise.

 

My husband has given them his seal of approval, and that means the world to me when it is something sweeter because he is much more a savory foods kind of person.  These bars are so simple to make, and only take a few ingredients.  Easy enough even that I was able to have my 3-year-old come help me make them, and quick enough that he didn’t start devolving into trouble making!  Huge success all around.  I will definitely be making these for bake sales, breakfasts, gifts, everything!

White Chocolate Strawberry Oatmeal Bars

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 1 8x8 inch pan

Serving Size: 1/16 of pan

Adapted from All Recipe's Delicious Raspberry Oatmeal Cookie Bars

Ingredients

  • 1/2 cup packed light brown sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon lemon zest
  • 1 cup rolled oats
  • 1/2 cup butter, softened
  • 1/2 to 3/4 cup strawberry jam (with or without seeds, I used seedless reduced sugar fruit spread)
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line an 8 inch square pan with parchment paper or greased foil.
  2. Combine brown sugar, flour, baking soda, salt, lemon peel, and rolled oats in a medium bowl. Rub in the butter using your hands to form a crumbly mixture that sticks together when squeezed.
  3. Remove 3/4 of a cup of the oatmeal mixture and set aside. Press the remainder of the oatmeal mixture into the bottom of the prepared pan.
  4. Spread the jam to within 1/4 inch of the edge. Sprinkle the white chocolate chips evenly over the jam.
  5. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
  6. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

Notes

Use any flavor jam you would like, whatever you have on hand. Adjust the amount to suit your sweetness preference.
