I am ashamed to say that I have only used my donut pan once since I bought it. I think I am trying to keep the temptation at arm’s length, because I like donuts almost as much as my kids. As a special treat today I thought I would make them some donuts again. I found a super simple, great looking recipe from Shugary Sweets, and thought it would be quick and perfect for this morning. Because really, how could you go wrong starting your day with Vanilla Donuts with Vanilla Glaze? I know this is a plain picture, and really could have used some sprinkles or something, but truthfully, I only have Halloween sprinkles, and I really could not bring myself to put those on these and put that picture out for valentine’s day. Too much shame in that picture. So instead, here is a plain-looking donut, that tastes anything but plain. Of course you can dress it up with all the toppings you want, and I think that would be fantastic, so go forth and be creative!
There is a secret ingredient in these that I know most home cooks probably don’t have, but don’t worry, they will taste just as good without it. It is called Princess Cake Flavoring and it is from King Arthur Flour. It gives them that slight birthday cake flavor like when you buy the vanilla ones from the store or bakery. A little bit of lemony notes, with a hint of something indescribably but yummy. It goes great in sugar cookies as well! Anyways, if you don’t have it, no worries, it will still be great!
Slightly adapted from Shugary Sweets' Vanilla Bean Donuts with Strawberry Glaze
Ingredients
- 2 cup all purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp sea salt
- 2 tsp vanilla extract
- 1/2 teaspoon Princess Cake Emulsion (optional)
- 2 eggs
- 3/4 cup milk (I used plain soy milk)
- 2 Tbsp butter, melted
- 1/4 cup Cold Stone Sweet Cream coffee creamer (or any vanilla creamer, or milk)
- 1 tsp vanilla extract
- 2 1/4cup powdered sugar
- a few drops of food coloring (optional)
Instructions
- Preheat oven to 325 degrees F.
- In a medium mixing bowl, combine all donut ingredients with a whisk until well blended.
- Fill a regular donut pan 1/2-3/4 full with batter. Use a large ziploc bag and snip off the corner, makes life neater.
- Bake donuts for about 11-14 minutes, depending on how full they are.
- Remove. Cool for 5 minutes, remove from pan and let cool a bit and then glaze.
- While donuts are baking, mix creamer, powdered sugar, food coloring, and vanilla in a small bowl to combine.
- To glaze donuts, either dip donut tops into glaze or use a spoon to drizzle it over the donuts. Let dry 5-10 minutes.
