
I am always in a breakfast rut. I want to make so many of the incredible recipes I see, but with school and homework and the demands of my kids, time just isn’t there to be baking from scratch right now. A few weeks ago I saw a recipe for Honey Bun Cake from Chocolate, Chocolate and More, a blog which I love, but have not had a chance to bake any of the many recipes I see on there. It looked so easy and delicious that I went out and bought a yellow cake mix just so I could make this Honey Bun Coffee Cake!
It is supposed to be reminiscent of the honey bun pastries that you get individually packed from Little Debbies or one of those companies. I vaguely remember what they taste like, and from what I remember, this is similar in taste. I can say for sure though, that this cake is super ooey gooey moist, because the glaze seeps down into the cake as it sits, permeating every nook and cranny with sweet honey goodness. Couple that with the cinnamon sugar ribbon running through it and I was in heaven! This is a super simple cake, and some of the changes I made to the recipe were to help myself (because I figured I would not be able to just have one piece, I was right), and cut back on calories. It still produced a light, moist, rich, wonderful, flavorful cake that is a masterpiece unto itself, not quite cake, not quite coffee cake, just honey bun perfection.
This whips up in like 5 minutes, and I made it the night before, and it was perfect for breakfast the next day. And snack. And dessert. Enjoy!
Adapted from Chocolate, Chocolate and More's Honey Bun Cake
Ingredients
- 1 cup brown sugar
- 1 tablespoon cinnamon
- 1 box yellow cake mix
- 1 cup fat free plain Greek yogurt
- 4 eggs
- 1/4 cup vegetable oil
- 1/2 cup applesauce (I used cinnamon natural applesauce with no added sugar)
- 1-1/2 cups powdered sugar
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 3 tablespoons water (or enough to thin out to desired consistency)
Instructions
- Preheat oven to 350 degrees F. Line a 9x13 baking dish with parchment paper or spray with nonstick cooking spray.
- In a medium bowl mix the Greek yogurt, eggs, oil, applesauce until well combined. Add the cake mix and mix either by hand vigorously or with a mixer on medium, for 2 minutes.
- In a small bowl combine the brown sugar and cinnamon and mix well.
- Spread half of the cake mixture into the bottom of the 9x13 baking dish. Evenly spread the cinnamon sugar mixture over the entire dish. Top with the remaining cake batter and carefully spread to evenly distribute.
- Taking a knife, drag it through the batter in swirls to slightly swirl the cinnamon mixture into the cake batter.
- Place in preheated oven and bake for 40 minutes, or until a toothpick inserted into the middle comes out clean or with just a few moist crumbs.
- In a medium bowl mix the powdered sugar, vanilla, honey, and enough water to make a glaze consistency. When the cake comes out of the oven, let it cool for 5 minutes and then spread the glaze over the top. It will soak in to the cake as it sits.
